Thai Peanut Chicken Bagel with Carrots Recipe

  • chicken breast 1 ½ cups cooked and shredded
  • peanut butter ¼ cup creamy
  • soy sauce 1 tablespoon
  • lime juice 1 tablespoon
  • honey 1 teaspoon
  • garlic 1 clove minced
  • sriracha or chili sauce 1–2 teaspoons
  • carrots ½ cup julienned or shredded
  • cilantro 2 tablespoons chopped
  • bagels 2 whole (split)
  • olive oil or butter 1 teaspoon (optional for toasting)

Method
 

  1. I start by mixing peanut butter, soy sauce, lime juice, and garlic. Then I stir everything until it becomes smooth and creamy. This sauce forms the bold Thai-inspired flavor foundation.
  2. Next, I add shredded chicken into the peanut mixture. I stir until every piece is fully coated and flavorful. The sauce should cling well without being too runny.
  3. I quickly shred carrots and chop fresh cilantro on the side. These ingredients add crunch and freshness to the sandwich. I keep them ready so assembly becomes fast and easy.
  4. I lightly toast the bagels until they turn golden and crisp. This step prevents sogginess once the filling is added. Warm bagels also enhance the overall flavor and texture.
  5. Finally, I layer the peanut chicken mixture on the bagel base. Then I top it with carrots and fresh cilantro generously. I close the bagel and serve immediately while fresh.
