Tilapia in Roasted Pepper Sauce Recipe

The first time I made this Tilapia in Roasted Pepper Sauce, I was honestly surprised by how flavorful such a simple recipe could be. I wanted something quick but still impressive for dinner, and this dish delivered perfectly

Ingredients
  

  • 4 tilapia fillets about 1 lb – Tilapia is mild and cooks quickly, making it perfect for absorbing the roasted pepper sauce. Try to choose fillets of similar thickness for even cooking.
  • 1 cup roasted red peppers jarred or homemade – These create the base of the sauce and add natural sweetness with a slightly smoky flavor.
  • 3 garlic cloves minced – Fresh garlic enhances the sauce with deep aromatic flavor. Avoid garlic powder for best taste.
  • 2 tablespoons extra virgin olive oil – Helps blend the sauce smoothly and adds richness. Use good-quality olive oil for the best flavor.
  • 2 tablespoons fresh lemon juice – Adds brightness and balances the sweetness of the roasted peppers. Fresh lemon works better than bottled.
  • 1/4 cup low-sodium chicken broth – Provides savory depth while keeping the sauce light.
  • Salt and black pepper to taste – Essential for enhancing the overall flavor of the dish.
  • Fresh basil or parsley for garnish – Adds a pop of freshness and color just before serving.

Method
 

  1. Start by preheating your oven to 400°F (200°C). This temperature cooks the fish quickly while allowing the sauce to develop flavor. Lightly grease a baking dish with oil or nonstick spray to prevent the fish from sticking during baking. Preparing the oven first ensures everything cooks evenly once the dish is assembled.
  2. In a blender or food processor, combine roasted red peppers, minced garlic, olive oil, lemon juice, salt, and pepper. Blend until the mixture becomes completely smooth and creamy. The sauce should have a silky consistency with no large chunks. If it looks too thick, you can add a small splash of chicken broth to loosen it slightly.
  3. Pour about half of the roasted pepper sauce into the bottom of your greased baking dish. Place the tilapia fillets gently on top of the sauce, spacing them evenly so they cook uniformly. Pour the remaining sauce over the fish, making sure each fillet is coated well.
  4. Place the baking dish into the preheated oven and bake for 20–25 minutes. The fish is ready when it flakes easily with a fork and looks opaque throughout. Avoid overbaking because tilapia cooks quickly and can dry out if left too long in the oven.
  5. Once baked, remove the dish from the oven and let it rest for a minute or two. Sprinkle freshly chopped basil or parsley over the top to add brightness and aroma. Serve the fish immediately while the sauce is warm and flavorful.

Notes

  • I always pat the tilapia dry before baking so the sauce sticks better to the fish.
  • I like blending the sauce a little longer to make it extra silky and restaurant-quality.
  • When I want a deeper flavor, I roast my own red peppers instead of using jarred ones.
  • I check the fish around the 20-minute mark to avoid overcooking.
