Trader Joe's Chicken Salad Copycat Recipe

I've been obsessed with Trader Joe's chicken salad for years, and I finally got tired of driving across town just to grab a tub of it. So one weekend I decided to recreate it in my own kitchen, and honestly, I nailed it on the first try.

Ingredients
  

  • 3 cups cooked chicken shredded or chopped — rotisserie chicken works great here and saves you time
  • 1/3 cup celery finely diced — adds that signature crunch in every bite
  • 1/3 cup dried cranberries — gives the salad its sweet-tart pop don't skip these
  • 1/4 cup pecans chopped — toast them lightly first for a deeper, nuttier flavor
  • 1/2 cup mayonnaise — the creamy base use a good-quality brand for the best taste
  • 1 tbsp honey — balances the tang from the vinegar beautifully
  • 1 tbsp apple cider vinegar — this is the secret to that tangy Trader Joe's flavor
  • 1 tbsp poppy seeds — adds texture and that classic speckled look
  • 2 tsp sugar — rounds out the sweetness adjust to your taste
  • 1/4 tsp kosher salt — always season to taste at the end too
  • 1/8 tsp white pepper — milder than black pepper and keeps the salad looking clean

Method
 

  1. If you're starting from scratch, poach chicken breasts in broth until they hit 165°F internally, about 10 minutes. I personally skip this step and grab a rotisserie chicken instead. Once cooled, shred or chop it into bite-sized pieces so it mixes evenly with the other ingredients.
  2. In a small bowl, combine the mayonnaise, honey, apple cider vinegar, poppy seeds, sugar, salt, and white pepper. Whisk everything together until it's smooth and well blended. This dressing is what gives the salad that signature sweet-tangy flavor everyone loves.
  3. In a large mixing bowl, toss together the chicken, celery, cranberries, and pecans. Make sure the chicken pieces are evenly distributed so every scoop gets a bit of everything. This is also when I taste-test a piece or two, just for quality control.
  4. Pour the prepared dressing over the chicken mixture and stir until everything is fully coated. I like to fold gently rather than stir hard, so the chicken doesn't break apart too much. Make sure every ingredient gets touched by that dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving. This resting time lets the flavors meld together beautifully. Serve it cold on bread, lettuce wraps, or straight from the bowl with crackers.

Notes

  • I always let my dressing sit for a few minutes before mixing it in, since the flavors blend better that way
  • I toast my pecans in a dry pan for two minutes, and it makes a huge difference in flavor
  • I chop my celery extra fine so it blends in without overpowering each bite
  • I taste and adjust the honey and vinegar ratio since brands of mayo vary in tanginess
  • I chill the salad longer than 30 minutes whenever I have the time, because overnight is even better
