Turkey Leftover Power Bowls Recipe

After a long day of Black Friday shopping, I opened my fridge and found cold turkey, roasted veggies, and a little leftover grain. I did not want a heavy hot meal, so I turned everything into a colorful bowl with a creamy lemon dressing.
Prep Time 15 minutes
Cook Time 5 minutes

Ingredients

  • 2 cups shredded cooked turkey breast: Shred it by hand so the dressing clings to every piece.
  • 2 cups cooked farro quinoa, or wild rice: Leftover grains work great, and day-old grains hold their shape better.
  • 2 cups leftover roasted vegetables sweet potato, Brussels sprouts, carrots: Any cooked veggie works, so use what you have.
  • 1 cup fresh arugula or spinach: Use fresh greens not frozen, so the bowl stays crisp.
  • 3 tablespoons tahini: It makes the dressing creamy without any dairy.
  • 2 tablespoons lemon juice: Squeeze it fresh for a bright clean flavor.
  • 1 tablespoon olive oil: It smooths the dressing and adds a little richness.
  • 1 garlic clove minced: Mince it very fine so it blends into the dressing.
  • 2 to 3 tablespoons water: Add it slowly until the dressing is pourable.
  • Salt to taste: A pinch lifts the nutty tahini flavor.
  • 2 tablespoons dried cranberries optional: They add a sweet, chewy contrast.
  • 2 tablespoons pumpkin seeds optional: They give the bowl a nice crunch.

Method

  1. Pull the turkey, grains, and roasted vegetables out of the fridge. Shred the turkey into bite-size pieces and chop any large vegetables. Let everything sit for a few minutes so it is not ice cold. This small pause helps the flavors come through.
  2. Place the grains in a saucepan with a splash of water and heat for about five minutes. You can also microwave them in a covered bowl. Fluff them with a fork so they do not clump.
  3. In a small bowl, combine the tahini, lemon juice, olive oil, garlic, and a pinch of salt. The mixture will look thick at first. Stir in the water, one spoonful at a time, until it is smooth and pourable.
  4. Divide the warm grains evenly among four bowls or containers. Spread them out so each bowl has a flat, even layer. This gives you a sturdy base for the toppings.
  5. Layer the turkey, roasted vegetables, and fresh greens over the grains. Keep each ingredient in its own section for a neat look. Make sure every bowl gets a fair share of turkey. I like to fan the turkey out so it looks generous.
  6. Pour the dressing over the bowls in a thin zigzag. Sprinkle on the dried cranberries and pumpkin seeds if you are using them. Serve right away or seal the bowls for later.

Notes

  • I always pack the dressing in a separate small jar, because it keeps the greens from getting soggy, even after a few hours in a bag or lunch box.
  • I warm the grains but serve the turkey cold or at room temperature, since it stays juicier that way.
  • I add a pinch of cumin or smoked paprika to the dressing when I want a deeper flavor.
  • I toast the pumpkin seeds in a dry pan for two minutes, and they taste so much nuttier.
  • I taste the dressing before pouring it, because tahini brands vary a lot in saltiness and bitterness.
  • I rinse cooked quinoa before using it in leftovers, and I find it tastes cleaner and less bitter.
  • I cut the roasted vegetables into similar sizes, so every forkful feels balanced and easy to eat.
