Viral Cucumber & Bell Pepper Salad Recipe

I couldn’t wait to try this Viral Cucumber & Bell Pepper Salad Recipe after hearing so much about it. The first time I made it, I was amazed at how fresh and flavorful it turned out. Every bite was crunchy, colorful, and full of bold taste.
Total Time 10 minutes
Servings: 4

Ingredients

  • 3 mini cucumbers – Crisp and seedless cucumbers work best for maximum crunch. Slice thinly for the best texture.
  • 1 red bell pepper – Adds sweetness and vibrant color. Fresh peppers give the best crunch.
  • 1 orange bell pepper – Enhances flavor and makes the salad visually appealing.
  • 1 yellow bell pepper – Adds natural sweetness and balances the flavors.
  • 2 –3 tablespoons ginger miso dressing – Brings a savory slightly tangy depth to the salad.
  • 1 teaspoon everything bagel seasoning – Adds crunch and a bold savory flavor.
  • 1 teaspoon chili crunch oil optional – Gives a spicy kick if you enjoy heat.

Method

  1. Start by washing all the cucumbers and bell peppers thoroughly. Slice the cucumbers into thin rounds and chop the bell peppers into small, bite-sized pieces. Keeping the pieces similar in size helps create a balanced texture in every bite.
  2. Place the sliced vegetables into a large mixing bowl. Add the ginger miso dressing, everything bagel seasoning, and chili crunch oil if using. Gently toss everything together until all ingredients are evenly coated with the dressing.
  3. For the best flavor, allow the salad to chill in the refrigerator for about 10–15 minutes. This helps the ingredients blend together. Serve cold and enjoy the refreshing crunch immediately.

Notes

  • I always use fresh, firm cucumbers to keep the salad crunchy.
  • I prefer slicing the vegetables just before serving to avoid excess moisture.
  • I adjust the dressing slowly to prevent overpowering the vegetables.
  • I sometimes add a squeeze of fresh lemon juice for brightness.
  • If making ahead, I store the dressing separately to maintain texture.
