Whole Foods Sonoma Chicken Salad Recipe

I used to buy this straight from the Whole Foods deli case at least once a week until I finally sat down and figured out how to make it at home for a fraction of the price. Once I nailed the balance of sweet grapes, crunchy pecans, and that creamy poppy seed dressing, I never looked back.

Ingredients
  

  • 2 cups cooked chicken shredded or diced — rotisserie chicken saves time and adds great flavor
  • ¼ cup plain Greek yogurt — lightens up the dressing without sacrificing creaminess
  • ¼ cup mayonnaise — gives the dressing its classic rich tangy base
  • 1 teaspoon honey — balances the tang with a touch of natural sweetness
  • 1 teaspoon apple cider vinegar — adds brightness so the dressing doesn't taste flat
  • ½ teaspoon poppy seeds — the signature touch that gives this salad its recognizable flavor
  • ¼ teaspoon sea salt — pulls all the flavors together adjust to taste
  • ¼ teaspoon black pepper — adds a subtle kick freshly ground is best
  • ¼ cup celery finely chopped — use fresh stalks for the crispest texture
  • ½ cup red grapes halved — go for seedless so you don't have to pick anything out
  • ¼ cup red onion finely diced — soak in cold water for five minutes if you want a milder bite
  • 1 tablespoon pecans roughly chopped — toast them first for a deeper, nuttier flavor

Method
 

  1. Start with chicken that's already cooked and fully cooled, since warm chicken will make your dressing separate. Shred or dice it into bite-sized pieces, whichever texture you personally prefer in your salad. Rotisserie chicken works wonderfully here if you want to skip a cooking step entirely.
  2. In a small bowl, combine the Greek yogurt, mayonnaise, honey, apple cider vinegar, poppy seeds, salt, and pepper. Whisk everything together until it's completely smooth and well blended. Taste it and adjust the salt or honey slightly if you want it sweeter or saltier.
  3. While your dressing sits, finely chop your celery, red onion, and pecans on a cutting board. Halve your grapes as well, since whole grapes can make each bite a bit awkward to eat. Keeping everything a similar small size helps the salad hold together nicely.
  4. Add your shredded chicken to a large mixing bowl, then pour the dressing over the top. Toss in the celery, grapes, onion, and pecans, folding everything together gently with a spatula. You want every piece of chicken lightly coated without mashing the ingredients.
  5. For the best flavor, cover your bowl and refrigerate the salad for at least 15 minutes before serving. This short rest lets the dressing really soak into the chicken and vegetables. Serve it cold, straight from the fridge, for that classic deli-style taste.

  • I always cool my chicken completely before mixing, since warm chicken thins out the dressing fast.
  • I toast my pecans in a dry pan for two minutes, and it genuinely changes the whole flavor of the salad.
