Chicken Mashed Potato Bowls Recipe

When I first made this dish, I was blown away by how comforting and satisfying it turned out. The combination of creamy mashed potatoes, crispy chicken, cheesy goodness, and savory gravy is unbeatable.

Ingredients
  

  • 2 cups warm mashed potatoes
  • You can use homemade or leftover mashed potatoes. For an extra flavor boost try garlic mashed potatoes.
  • 6 ounces cooked chicken nuggets about 12-16 nuggets
  • Air-fried nuggets are perfect for a crispy texture but baked ones work too.
  • 1/2 cup prepared gravy
  • Use chicken or turkey gravy for the best flavor. Opt for homemade or your favorite store-bought brand.
  • 1/2 cup corn cooked
  • Fresh canned, or frozen corn will work here, but drain canned corn and thaw frozen corn before using.
  • 1/4 cup shredded Colby-Jack cheese
  • Shred the cheese fresh for maximum flavor and a perfect melt.
  • Salt and pepper to taste
  • Essential for seasoning your dish to perfection.
  • Parsley optional, for garnish
  • Adds a vibrant pop of color to your bowls.

Method
 

  1. If you're using homemade mashed potatoes, warm them in a saucepan or microwave. For extra flavor, consider whipping up garlic or Parmesan mashed potatoes. Store-bought mashed potatoes are a quick and useful alternative, too.
  2. Air fry the chicken nuggets if possible; this locks in a crispy exterior that pairs perfectly with the creamy potatoes. Alternatively, bake or pan-fry them according to package instructions.
  3. Warm your gravy in a small saucepan over low heat until smooth and steaming. At the same time, cook your corn in another saucepan. If you're using canned corn, drain it first. Frozen corn should be thawed and drained as well before cooking.
  4. Start by spreading a thick layer of mashed potatoes at the bottom of each serving bowl. Divide the chicken nuggets evenly between the bowls and scatter the corn on top. Sprinkle shredded Colby-Jack cheese generously over everything. Drizzle the hot gravy across the top to bring the layers together beautifully.
  5. Season each bowl with salt and pepper to taste. For a splash of color and a touch of freshness, garnish with chopped parsley. Dig in while the bowls are warm and satisfying!

  • Use homemade gravy if you can; it adds richness you just can’t replicate with store-bought.
  • Don’t skimp on the cheese—freshly shredded cheese melts so much better than pre-packaged options.
  • If you’re in a rush, opt for instant mashed potatoes, but enhance the flavor by mixing in butter or a drizzle of cream.
  • An air fryer is your best friend for making chicken nuggets golden and crispy without excess oil.
